CREAMY COCONUT COCKTAIL

INGREDIENTS

8 cups coconut milk
cups coconut rum
¼ cup coconut sugar, or cane sugar
1 tablespoon vanilla extract
sweetened whipped cream
1/4 teaspoon nutmeg, freshly grated
1 tablespoon shredded coconut

INSTRUCTIONS

In a saucepan heat the coconut milk with the vanilla and sugar, stirring well until sugar is dissolved and the mixture is hot and simmering, about 5 minutes. Taste and add more sugar if a sweeter drink is desired. Add the rum and pour into glasses with ice or without ice. Top with sweetened whipped cream and garnish with freshly grated nutmeg and shredded coconut. Serve immediately.

PINEAPPLE RUM COCKTAIL

INGREDIENTS

4 cups pineapple chunks chilled
1 ½ cups ice
¼ cup lime juice
¼ cup coconut milk
¼ cup rum

INSTRUCTIONS

Combine pineapple, ice, lime juice, coconut milk, and rum into blender. Blend until smooth. Add more ice for a thicker frozen cocktail. For a sweeter drink, add in simple syrup! Garnish with a pineapple round, lime wedge, and sprig of mint!

INGREDIENTS

30ml Baileys Irish Cream
30ml
Creme de Menthe liqueur
30ml vodka
30 ml half & half
ice

whipped cream (for decoration)
chocolate (for decoration)

INSTRUCTIONS

Fill cocktail shaker with ice. Add ingredients; cover and shake well. Strain into a martini glass (decorated with chocolate). Garnish with whipped cream and chocolate shavings as desired.

INGREDIENTS

1 cup creamy peanut butter
3 cups cream liqueur
1 1/2 cups vanilla vodka
3 cups milk or cream
Chocolate bitters – optional
Chocolate syrup

INSTRUCTIONS

Mix the peanut butter and cream liqueur together until smooth. Stir in the vodka until smooth. Slowly stir in the milk and mix well. Add in a few dashes of chocolate bitters, if desired! Drizzle chocolate on the insides of your cups and pour your drinks. Serve cold!

 

CHAMOMILE GIN COCKTAIL

INGREDIENTS

2 tbsp chamomile tea
45ml gin
15ml St Germain
15ml lemon juice
1 egg white
ice
fresh chamomile (for decoration)

INSTRUCTIONS

In a glass combine the chamomile and gin and let infuse for 20 minutes. In a shaker combine the infused gin, St Germain, lemon juice and egg white and shake for 30 seconds with no ice. Fill shaker with ice and shake again for another 30 seconds. Double strain into a coupe glass and decorate with chamomile flowers. Enjoy!

 

BLACK CHOCOLATE MARTINI

INGREDIENTS

100 ml prepared hot chocolate, cooled
20ml dark Creme de Cacao
20ml vanilla vodka
30ml Kahlua
6 mini marshmallows

INSTRUCTIONS

Fill a cocktail shaker with ice. Add cooled hot chocolate and liquors; shake for about 30 seconds. Pour into a chilled martini glass. Drop mini marshmallows onto the top. Roast marshmallows with a kitchen torch.

 

CREAMY MOJITO

INGREDIENTS

1 lime, quartered
8 fresh mint leaves
1-2 teaspoons granulated sugar (optional)
2 tablespoons white rum
1 tablespoon coconut rum
50g cup canned full fat coconut milk well stirred
ginger beer for topping

LIME SUGAR

zest of 1 lime
2 tablespoons granulated sugar
flaky sea salt

INSTRUCTIONS

To make the lime sugar: Combine the lime zest, sugar, and a pinch of salt on a shallow plate. Rim your glasses in sugar, then fill with ice.
In a cocktail shaker or glass jar, muddle the lime, mint, and sugar (if using) together, squashing everything to release the juices. Add the white rum and coconut rum. Fill with ice and shake until combined. Add the coconut milk and shake. Strain into your prepared glass. Slowly top with ginger beer, then gently stir to combine.

MANGO DAIQUIRI

INGREDIENTS

1 large ripe mango 
90 ml white rum
2 tbsp sugar syrup (adjust to taste)
1/4 cup fresh lime juice
1 heaped cup of ice cubes (or 1 cup crushed ice), plus more to serve

SUGAR SYRUP 

¼ cup white sugar
¼ cup boiling water

INSTRUCTIONS

Chill glasses in the fridge. Place Daiquiri ingredients in the blender in the order listed (ice last, blends better). Whizz until ice is blitzed. Taste test then adjust sour with lime and sweetness with sugar. Pour into glasses – this recipe makes the perfect amount to fill 4 martini glasses. Garnish with strawberries, lime and mint if desired. Serve cold.
